I love potatoes, they are perfect for feeding any family large or small. Potatoes are very versatile as well. Over the years, potatoes have gotten a bad reputation when it comes to nutrition but these brown beauties are full of Vitamin B and Vitamin C and one medium-size potato has only 110 calories. Did you know that a potato has more potassium than a banana? Yes, it is true, adding a potato to your diet is really not that bad for you after all. 

On top of being nature’s vitamin pill, the potato has other benefits. A 5-pound bag of potatoes is really easy on the budget, especially when feeding a large family, and a few potatoes go a long way. Potatoes are also easy to store. Potatoes are native to South America and were introduced to other parts of the world in the 16th century. Potatoes have medicinal qualities as well. I could go on and on about potatoes let’s just say potatoes are powerhouses when it comes to health benefits and nutritious.

Here is a quick and easy recipe for potatoes that the whole family will enjoy and the next time you take a donation to a food bank, bring a bag!

Ingredients

  • 2 Tbls vegetable oil
  • 2 – 3 microwaved skin on potatoes, (microwave on high 2 – 3 minutes)
  • 1/4 tsp salt and pepper
  • 1/4 cup of favorite cheese
  • 1/4 tsp paprika (optional)

Directions

Once potatoes have cooled enough for you to handle, in a large bowl shred with skin on, discard and leftover peel or you can just add to your shreds. Add salt, pepper, paprika and combine. In a skillet, on medium heat add vegetable oil to the hot skillet. Place shreds in skillet until brown, flip if necessary and brown the other side. Once browned, remove from heat and add cheese. cover with the lid to melt the cheese for 2 – 3 minutes, serve and enjoy. make 2 – 3 servings, If you are watching your calories, substitute oil for non-stick spray and leave out the cheese.
