Florida’s strawberry season runs from December to March and this recipe is great for all strawberry lovers. It is easy to make, and because you are making this recipe yourself you can adjust the sugar or use an alternative such as agave or honey.
Ingredients
- 2 cups fresh strawberries, roughly chopped
- 2 cups of sugar
- 1 (1.75 oz) package of dry pectin or 2 tablespoons of cornstarch
- 3/4 cup of water
Directions
In a large plastic or glass bowl mix strawberries with sugar, let stand for 10 minutes. In a small saucepan add pectin or cornstarch to cold water, on medium-high heat bring to a boil, stirring occasionally minute. Carefully add boiling water to the bowl of strawberries and stir. Let mixture stand for 10 minutes then pour into freezer safe jars. Let jars cool for one hour. Cover and place in the fridge for 24 hours. After 24 hours you can place the containers in freezer or use. Don’t forget to label and date with freezer tape. May be kept in the refrigerator for up to 3 weeks, and up to 1 year in the freezer.
